To make shortcrust biscuits

Preparation of shortbread biscuits
Put the flour on the pastry board and, making a hole in the center, add sugar, egg yolks, vanilla, butter and start kneading.
In case you need to use some liquid, add some spoons of albumin.
You’ll get a rough dough, wrap it with cling film and put it in the fridge for at least one hour.
After this time, take the dough and after having kneaded and softened it a bit, , start rolling it out with the rolling pin.
To make it easier it’s better to divide the dough in two parts and use some flour in case it sticks to the pastry board.
The sheet has to be about 20 mm wide.
Form some discs using a medium cookie cutter and lay them on a baking tray covered with parchment paper.
Bake them in a ventilated oven set to 180° for 10-12 minutes,
They will still be soft but ready.
Let them completely cool.

When the custard is cold, put it into a sac a poche with a plain tip.
Cover a disc of shortbread with abundant custard, lay another shortbread on it to make a sort of sandwich, letting the custard a bit out in order to cover it with chopped hazelnuts.
The Delicious are now ready, put them in the fridge stored in a sealed box until the time to serve them. Sprinkle them with icing sugar before serving.
You can also use red food colouring to sprinkle them during Christmas time.
In this case I suggest mixing two spoons of red food colouring and one of icing sugar to mitigate the strong taste of the red.
What liqueur to match with the Deliziose Napoletane?
There are many liqueurs that can be served with the Deliciouses but I suggest limoncello.
Homemade limoncello, if served very cold, it’s ideal for this cake.
