Fresh pasta homemade preparation
Put the flour on a pastry board, make a hole in the center, large enough to contain the eggs and add them. (salt and oil are optional)
Start beating the eggs with a fork until the yolks are completely broken, then start incorporating the flour around them.
When all the flour has been incorporated, knead it with the palm of your hands until you have a compact dough, pressing first, then folding the dough and pressing again. Keep kneading it for at least 5 minutes until it becomes smooth.
This preparation can also be done with the help of a household appliance, but in this case, when the dough has been removed from the mixer it has to be kneaded for a few minutes with your hands.
Wrap the dough in a cloth or in a plastic wrap and let it rest in the fridge for about 20 minutes.
